

(Fer)mental Greens
Hello! My name is Vaso Makri and I am a forager and cook based in Lancaster UK. When I’m not tasting something muddy you will find me reading on bushcraft and trying out traditional preservation methods.
I grew up in Greece, where my mother would often take me on coastal walks. I remember finding razor clams, mussels, limpets, samphire and wild fig trees on the coasts of Greece and becoming mesmerised by the fact that food was so abundant all around us.
This passion of mine became even greater when I first moved to the UK 10 years ago. The UK being wetter than Greece meant that there were many more greens to learn about and forage which I have been happily doing for the last 8 years. I have also worked for years with children and people with physical and mental health issues, all in natural settings such as community gardens and urban farms.
With the confidence that nearly 10 years of foraging gave me, and an exceedingly curious palette, I decided to start this website to inspire others to open their homes (and their mouths!) to all the wild food that can be found here in Lancashire. I also dehydrate, can, ferment and preserve foraged produce in different ways.
