Small winter foray

This time of the year it feels like there is nothing growing out there. Everything is either frozen or too wet or too young or too momldy or too anything to pick.

There are however some greens that can see us through the winter months. And what better way to use them than a Greek greens pie.

The Greek greens pie, or Hortopita is a fantastic way to use up any greens. The more variety the better as its taste definitely benefits from having a combination of bitter greens like dandelions and zonchus, sweeter greens like chickweed and some aromatics such as spring onions and dill.

Some of the greens I foraged this January are

  • Nettles
  • Dandelions
  • Sowthistles
  • Chickweed
  • Wild parsley (be VERY careful when foraging anything in the parsley family)
  • Purslane
  • Sea beets
