Wood avens syrup

As my adventures with this lovely little plant continue, I couldn’t not try the famous Wood avens syrup. The idea is simple, make wood avens syrup and use it in everything- from your coffee to your pancakes for a lovely clove-y, cinammon-ey taste.

The execution is quite simple too.

  • Gather about 10-15 wood avens roots and wash them thoroughly.
  • Cut the green tops off and clean the roots as best as you can.
  • In a saucepan melt equal parts sugar and water- the less liquid there is the more concentrated and strong the aroma of the wood avens
  • Add the wood avens roots, submerge them under the liquid and simmer for 10-15′. Don’t cook more because the aroma mightfade
  • Empty the contents of the saucepan, roots and all, in a jar and keep in the fridge for 2-3 weeks.
  • After that time, pass the liquid through a muslin cloth to get rid of impurities. You can also take the roots out and dry them to use further or throw them in your compost heap.
  • Your syrup is ready! Enjoy!
