This is a short, easy and incredibly delicious recipe for Common Hogweed, AKA cow parsnip and Heracleum sphondylum.
Growing everywhere this time of the year, it means that after correctly identifying it, you can gather as much as you want without feeling guilty. Fellow forager Mark Williams said that it tastes delicious without needing even salt and he was absolutely right.
For this simple recipe you will need:
- 4 cups common hogweed
- 1 tablespoon butter or lard
- chilli flakes to taste
- zest of 1/2 lemon
Place butter or lard in a pan over medium heat and wait until it melts. Add the hogweed and simmer in the fat until it wilts. Plate immediately and garnish with chilli flakes an lemon zest. Enjoy as a side or in a sandwich. For an extra treat you can add wild garlic and bacon!
